Provencal Style Red Snapper

1 tbls olive oil1 med. onion, chopped1 tsp minced garlic1 cup chopped tomato1/2 cup white wine1/2 cup Nicoise olives1/4 cup chopped basil leaves1 sprig fresh rosemary1 sprig fresh thymeSalt & Pepper to taste12 oz red snapper fillets (2 - 6oz pieces)
1 - Heat olive oil for 2 minutes in large deep skillet over medium heat. Add onions and cook, stirring, until they have softened, about 5 minutes.
2 - Add the garlic and tomatoes, raise the heat slightly and cook, stirring occasionally until some of the tomato juice has boiled away. Add the wine, stir and cook another 5 minutes.
3 - Add the olive, half the chopped basil, the rosemary & thyme, and some salt (if necessary - remember the olives are salty) and pepper Cook 1 minute, submerge the fish in the sauce and cook over medium heat until the fillets are tender and white - about 8 minutes.
Garnish with remaining basil and serve.
