No-Dairy, No Sugar, No Gluten Gotta Have Pudding

1/2 c pearl tapioca4 c coconut milk (I used So Delicious brand unsweetened)1/3 c agave nectar2 eggs1/4 tsp cinnamon
Soak tapioca in 1 cup of coconut milk for an hour or more. Pour into medium saucepan with remaining 3 cups of coconut milk and agave nectar. Stir thoroughly.
Break eggs into dish and beat with a fork. Add to coconut milk mixture. Cook over medium heat stirring constantly until it thickens. Add cinnamon. Turn heat down to low when it approaches boil and continue to stir constantly for about 20 minutes total. Pour into serving dishes and let cool.
Makes 8 servings about 1/2 cup each.
