Mango Cake

Ingredients
2 cups oats, ground1 tbsp baking powder1/2 tsp salt1 tsp cardamon powder1 1/2 cups mango, pureed1/3 cup canola oil1 tsp vanilla extract2/3 cups sugar
Directions
Preheat oven to 350 degrees. Prepare an 8 or 9 inch round baking pan with butter and dust with powdered sugar. Combine oat flour, baking powder, salt and cardamon powder in a bowl; set aside. In another bowl combine the mango puree, oil, sugar and vanilla. Add the flour mixture until incorporated, DO NOT OVER MIX. I did everything by hand to make sure it wasn't over mixed. Pour into prepared pan and bake for 20-25 minutes until a toothpick inserted in the middle comes out clean. Let cool in pan until sides of cake pull away from sides of pan. Invert on serving plate and let cool completely. Dust with powdered sugar. Enjoy.
