Pie6 cups cooked sweet potatoes (peeled, boiled, and drained)1 cup Splends2 sticks "I Can't Believe It's Not Butter"2 tablespoon vanilla flavoring4 eggsTopping1 cup Splenda Brown Sugar1/3 cup "I Can't Believe It's Not Butter" melted1 cup chopped pecans2 ready-to-bake pie crusts
Preheat oven to 325 degrees. Spray Pam on 2 pie pans, put crust in pie pan and bake for 15 minutes. Peel, slice, and boil potatoes until tender. Drain. Add eggs, Splenda, and Vanilla using hand mixer. Pour into pie shells. Combine melted butter, Splenda Brown Sugar, and nuts in small bowl. Using a spoon, drop the mixture on top of the pies. Bake for 30 minutes. Makes 2 pies, 16 slices
