Tamale Pie

Ingredients
Filling:1lb ground beef1 small onion, chopped1 cup carrots, chopped or diced (optional)1/2 cup mushrooms, diced (optional)1/2 cup red bell pepper, diced (optional)1 cup diced tomatoes (optional)1 jar (16 oz) Ortega Salsa (any flavor)1/3 cup water1 pkg. (1.25oz) Ortega Taco Seasoning Mix1 cup frozen corn kernals1 can (2.25 oz) diced ripe olives, drained (black)Crust1 cup yellow or white corn meal1 can (12 fl oz) evaporated milk (fat free optional)1 can (4 oz) Diced Green Chilies1/3 cup shredded cheddar cheese1 tsp salt
Directions
For Filling:
Cook beef, onion, carrots, mushrooms, bell pepper and tomatoes in large skillet until beef is browned; drain. Stir in salsa, water and seasoning mix; bring to a boil. Reduce heat to low; cook stirring occasionally, for 3 to 4 minutes. Add corn and olives.

For Crust:
Preheat oven to 425 F
Combine cornmeal, evaporated milk, chilies, cheese and salt in a medium saucepan. Cook over medium-high heat, stirring frequently for 5 to 7 minutes or until thickened.

Spoon filling into 12 x 8 inch ungreased baking dish. Spread cornmeal mixture on top.

Bake for 25 minutes. You can sprinkle cheese on top and bake for an additional 5 to 10 minutes or until cheese is melted.
