Zesty Chicken Noodle Casserole

6 oz whole wheat pasta of choice1 Tbsp olive oil4 tsp whole wheat flour2 cup skim milk1 Tbsp reduced fat parmesan2 cups cubed cooked boneless, skinless chicken breast1 small red onion, chopped2 Tbsp chopped canned green chiles1 Tbsp dijon mustard2 tsp seasoned bread crumbs 2 tsp panko break crumbs
Cook the pasta according to package directions; drain. Preheat the oven to 375 degrees; spray a casserole dish with nonstick cooking spray.
In a medium nonstick saucpan over medium heat, heat the oil. Sprinkle with the flour; cook, whisking constantly, until thickened, about 2 minutes. Whish in the milk and cheese; cook, whisking contantly, until thickened.
Remove from heat. Stir in the pasta, chicken, onion, chiles and mustard. Transfer to casserole dish; sprinkle with bread crumbs and panko. Bake uniil browned and bubbling; about 20 to 25 minutes.
