Zucchini & Corn Soup

2 tbsp olive oil1/2 cup diced onion2 tsp minced garlic1/2 cup white wine4 cups thinly sliced zucchini1 can yellow corn, drained1 tbsp fresh lemon thyme1 tsp sea salt
Saute onion and garlic in olive oil. Add white wine and stir. Add zucchini, corn, lemon thyme and salt. Saute for 10 minutes, stirring occasionally. Add stock and water. Bring to a boil. Reduce heat and simmer for approx. 20 minutes. Turn off heat and let cool. Puree in blender. Store in fridge and reheat to serve.
