Spinach & Mushroom Egg White Mini Quiches

Ingredients
Olive Oil, 0.5 tbspMushrooms, fresh, 8 ozSpinach, frozen, 1.5 cup Onions, raw, 0.5 large All White's Liquid Egg Whites, 3 cupParmesan Cheese, shredded, 6 tbsp
Directions
Heat pan over medium low heat and sauté chopped onion and chopped mushrooms for about 10 minutes. Add frozen spinach and cook for 5 minutes more.

Prep muffin pan by spraying with cooking spray.

Add about 2 tablespoons of mushroom spinach mixture to each muffin cup and add 1/4 cup egg white to each cup.

Top each cup with 1/2 tablespoon of Parmesan cheese.

Bake for 20 minutes or until eggs are set.

Makes 12 servings.
