Turkey Vegetable Bolognese Sauce

Ingredients
1 pkg. (375 g) Catelli Spaghetti1 Tbsp. vegetable oil1 Tbsp. minced garlic2 onions, finely chopped1 cup each chopped celery, carrot, red pepper, mushrooms1 1/2 tsp. each dried basil, oregano and thyme leaves1 tsp. each salt & pepper1 to 1 1/2 lb. lean ground turkey1/3 cup tomato paste1 large can crushed or pureed tomatoes1 cup milk, 1% or higher fat content
Directions
Heat oil in dutch oven set over medium heat. Add garlic, onions, celery, carrot, red pepper and mushrooms. Saute for 15 minutes or until tender. Stir in basil, oregano, thyme, salt (if not on sodium restricted diet) and pepper. Crumble in meat and saute for 5 minutes. Stir in tomato paste, crushed tomatoes and milk. Reduce heat to medium or low and simmer for 45 minutes or until thickened. Prepare spaghetti according to package directions. Spoon sauce over hot spaghetti. TIP: Extra sauce can be frozen in an airtight container for later use. Serves 4.
