Tomato, Peach & Mango Salsa

2 large ripe red tomatoes, finely diced2 large ripe but firm peaches, finely diced1 mango, finely diced2 tbsp fresh cilantro, chopped1/2 yellow bell pepper, diced1/2 large onion, diced1 jalapeno pepper, minced1 tsp ground cayenne pepper (optional- add more or less to preferred spiciness)Juice of 1 large lime
Combine all of the prepared ingredients in a large bowl, refrigerate for at least one hour for the flavors mix. The ground cayenne pepper is optional -- add it if you would like a hotter salsa.
I like to serve it with blue corn tortilla chips, although it is also delicious with grilled meats and fish.
Makes 12-16 servings of 1/2 cup.
