Beet and Carrot soup with Ginger

Ingredients
4 cups fresh beets, peeled and chunked5 medium carrots, peeled and chunked1 med onion, peeled and quartered4 cups beef stock (could be chicken or veg or water)2 T freshly grated ginger root1 cup of fat free plain yogurtSalt and pepper to taste
Directions
Put everything in a pot except the ginger and yogurt adding water to cover all veg, Cook until everything is soft enough to puree.

Puree.

Add yogurt and water until it's of desired texture. Grate in ginger. Season to taste.

Garnish with yogurt and herbs, if desired.

Should make 10 1.5-cup servings!
