Garlic Soup

Ingredients
1.25 cups of diced carrot1.25 cups of diced potatoe.5 cup of garlic ( I cut the ends of the cloves)2 cups of chicken broth (can use water to make vegan)1 tablespoon of extra virgin olive oilsalt and pepper to taste
Directions
add extra virgin olive oil to soup pot, turn on burner to medium-high. add carrots, potatoes and garlic and saute for a couple of minutes to sweat vegetables. add salt and pepper. add chicken broth (or water). turn heat down to medium-low. simmer vegetables until tender. turn off heat and ladle into blender and a puree till smooth. you can do in batches.
