Easy Healthy Pumpkin Muffins

1 C Canned pumpkin1/2 c canola oil1/2 c water1/2 c Egg beaters (equivalent to two eggs)3/4 c packed brown sugar1 c whole wheat pastry flour1 tsp baking soda1/2 tsp baking powder1/4 tsp salt1 T pumpkin pie spice
Preheat oven to 350 degrees farenheit.
In one bowl mix pumpkin, oil, water and egg beaters
In a second larger bowl, mix the remaining dry ingredients with a whisk until combined. Make a well in the center.
Pour the wet ingredients into the dry and stir until combined (just until the flour is incorporated and no lumps can be seen, do not over mix)
Pour into paper lined muffin tins to fill about 3/4 full
Bake 30 minutes.
