Fiber Cereal Muffins with Golden Raisins

1 cup King Arthur white whole wheat flour2 tsp. baking powder ½ tsp. salt1 tsp. pumpkin pie spice 2 cups Kashi® GoLean® Original cereal1 cup Almond milk, original2 large eggs¼ cup honey¼ cup blackstrap molasses2 tsp vanilla extract½ cup unsweetened applesauce2 medium ripe bananas, mashed4 tbsp ground flaxseed meal1/4 cup golden raisinsNonstick cooking spray
Makes 12 regular sized muffins.
Directions
Preheat oven to 400° degrees.
In a small bowl, stir together flour, baking powder, salt, and pumpkin pie spice. Set aside.
In a large mixing bowl, crush Kashi® cereal, add almon milk and let stand for 2-3 minutes, allowing the cereal to get soft. Stir in honey, molasses, applesauce and banana. Add the egg and mix well. Add vanilla extract. Stir in flax seed and raisins.
Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins).
Fill sprayed muffin tins. Bake for 20-25 minutes, or until lightly browned. Cool before serving.
