Green Chili and Potatoes

About 1 lb of ground beef. (browned then rinsed and drained)2 very large potatoes (or 3 med-small), cubed then boiled in water1 small can Diced Green ChilisAll kinds of seasoning to taste :)I used Chili powder, garlic, cumin, cayenne pepper, black pepper, and salt.
Cut potatoes into small cubes and place in a large pot of boiling water.
Meanwhile, brown your ground beef with some onions (optional) until cooked in a skillet.
Drain the potatoes and return them to the larger boiling pot. (rinse the pot if needed).
Drain and rinse the ground beef very well. And let that sit to drain while....
you add .5 C. flour to the drained potatoes and stir that around to evenly coat over medium heat, then add about 2 C. water (a little at a time until you like the consistency).
I mushed my potatoes a little with the spatula to make a creamy sauce kind of.
Add green chilis.
Add drained, cooked ground beef.
Add seasonings.
Simmer until you're hungry enough to eat! (about 10 mins)
I will tell you, it doesn't look pretty to eat. It looks like slop, but it's dinner out of nothing in the cabinet and that's all I was after. :)
I sprinkled crumbled crackers on mine.
Makes about 6 1.5 C servings.
