Fresh Apple Cake

Ingredients
2 cups sugar1 1/3 cup canola oil2 large eggs2 1/2 cups flour1 tsp salt1 tsp baking soda1/2 tsp cinnamon3 cups apples, sliced in pieces1 cup chopped walnuts
Directions
Preheat oven to 350F. Spray 13x9 pan with cooking spray (we use canola). Combine all ingredients in a large bowl and mix well. Pour into pan. Place in the middle of the oven. Bake until toothpick comes out clean. Let cool and serve.

    This recipe is way to high in calories for me to try as is. Have you tried subbing applesauce for some of the oil, and splenda for the sugar? It wouldn't make much difference except in the calorie department. - 10/18/11
