"Blackened" Boneless Pork Chops

Approx 16 oz lean, trimmed center cut boneless pork chops1 tsp Sugar1 tsp Smoked Paprika1 tsp Onion Powder1 tsp Black Pepper1/2 tsp Garlic Powder1/4 tsp Cayenne Pepper1/2 tsp White Pepper1 tsp Ground Cumin
Mix together all spices (preferably in a shaker bottle.) Lightly coat both sides of each chop - you should easily be able to cover the meat with a light coat and have some left over.
Grill chops on a well-heated grill (just barely off the side of the coals for me) for 5-10 minutes per side.
Note - my boyfriend is sensitive to spicy foods, so I usually decrease the cayenne to a scant 1/8tsp for this recipe. Increase or decrease as you prefer. The original recipe I had called for salt (1/2 tsp) and regular paprika, and did not include cumin - it was still tasty! I also tend to sometimes double the garlic powder.
Also note - I usually triple this recipe, and have enough to fill an old McCormick seasoning bottle.
