Asopao de Camarones (Shrimp Stew)

Ingredients
* White Rice, long grain, 2 cup * *Peppers, sweet, red, fresh, .5 cup, sliced * Green Peppers (bell peppers), .5 cup, strips * Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) * Kalamata, Green Olives, pitted, 1 oz * Shrimp, cooked, 16 oz * Cilantro, raw, 2 tbsp * Olive Oil, 0.125 cup
Directions
sautee all the vegetables, and add a 1/4 of the shrimp. Add two cups of water and let sit covered on a slow simmer.
Add 2 coups of rice and let cook until it is soupy. If needed add more water, rice to water ratio should be 3 times.
