easy peasy turkey cabbage rolls for 2

1 cup ground turkey (cooked)1.5 cup canned chopped tomatoes and juice (more juice than maters)2 med cabbage leaves.5 cup brown rice (cooked) (I use a little more than 2 tbsp in each roll)
Start simmering toamtoes in a tbsp of olive oil (garlic, a few drops of lemon juice,oregano and pepper if desired)
place half the meat in each leaf and half the rice in each leaf. Roll up bottom part first then sides and top to make an envelop. Secure with toothpicks (or string if you have the patience) Place rolls gently in tomato sauce. Simmer for about half an hour or until cabbage is just tender basting often with toamto juice. Enjoy.
