No Grain Pancakes

Ingredients
200 gms ground walnuts1 tsp baking powder4 tbl sour cream2 eggs lightly beaten120 mls water4 tbl sugar free maple syrup2 tsp vanilla extractolive oil spray
Directions
1. In a bowl, mix ground walnuts and baking powder.
2. Add sour cream, egg, water, maple syrup & vanilla. Mix well.
3 Ladle 2 tbls of pancake mixture to form each pancake onto preheated and greasd frying pan or griddle. Cook on medium heat until golden brown on underside of the pancakes and bubbles form on the top. Approx 3-4 minutes. Gently tur over and cook for 3-4 minutes until golden.
4. Serve with your favorite topping
Cooled pancakes can be frozen.
