Ham, Potato and Mushroom Egg White Mini Crust-less Quiches

Ingredients
Mushrooms, fresh, 8 ozHam, Oscar Mayer Deli Fresh, Virginia Brand, Shaved, 6 slices, 2 servingOnions, raw, 0.5 largeOlive Oil, 1 tbspAll White 100% Liquid Egg Whites, 3 cupPotato, raw, 1 cup diced
Directions
Pre-heat oven to 350.
Par boil potatoes. Set aside.
To a pan heated over medium-high heat add olive oil, chopped mushrooms, chopped onions and par boiled potatoes.
Add salt and pepper to taste.
Sauté over medium-high heat until well blended and the potatoes are soft. About 15-20 minutes. Add chopped ham and toss to mix.
To a muffin pan sprayed with non-stick cooking spray, add about 2 tablespoons of potato, ham mixture to each muffin cup.
Add 1/4 cup egg whites to each muffin cup.
Bake in preheated oven for about 20 minutes or until set.
