The Perfect Fried Egg

Ingredients
1 egg, as fresh as you can get itOnly a DAB of olive oil1T or less of waterDash of salt, to tasteDash of pepper, to taste
Directions
Take a small piece of paper towel and drip a tiny dab of olive oil on it. Rub oil dab onto non-stick pan to barely coat surface. No oil puddle should remain. Heat pan on medium heat for 2 minutes. Carefully crack egg into pan. Do not move the egg or pan at all. Let the egg cook until the white starts to become opaque but yolk and surrounding white are still translucent. Take a tablespoon of water and add to hot pan. Immediately cover pan to let egg steam. Check egg in 1 minute. Add more water and steam longer until your liking. After about a minute and a half, white will be completely cooked, yolk will remain running. Serve with a dash of salt and pepper. Enjoy!
