Citrus Cilantro Harvest Couscous

Ingredients
1 T Olive Oil1/4c chopped white onion4 whole sun-dried tomatoes, chopped2c water (or vegetable stock)1 1/2c Trader Joe's Harvest Grains Blend CouscousSalt (to taste)1/2 tsp ground pepper3 tsp ground cuminJuice from 1/2 lime2 T cilantro, chopped
Directions
Heat olive oil sauce pan. Add onion and tomatoes and cook until onions are translucent. Add chicken broth and bring to a boil. Pour in couscous. Add salt, pepper, cumin, and lime. Simmer covered for 10 minutes. Remove from heat. Mix in chopped cilantro and serve!

    Ah! When I entered this, I actually ate it as my whole dinner, so I only put it in as 2 servings... I just changed it to 4 servings. It's still a little high in cals for a side dish, but it's a great treat once in a while!
