Peanut sauce chicken with spinach

Ingredients
Directions
Chicken broth, creamy peanut butter, basalmic vinegar, cayenne pepper, chicken breast, spinach
Chicken and spinach:
Heat pan with a little bit of water, place chicken in pan and cover. Turn chicken after about 10 minutes and let cook for an additional 10 minutes. Water should evaporate. Take off cover and brown each side of the chicken for about 5 minutes a side. Steam spinach until it just starts to wilt.
Sauce:
In a pot heat chicken broth unitl just boiling. Add peanut butter and basalmic vinegar. Reduce heat and stir with a whisk. The peanut butter will melt and the sauce will thicken. Add cayenne pepper just before serving.
Note: you may need to add more or less pepper depending on your taste buds. I like mine to have a little kick but not too spicy.
Pour peanut sauce over chicken and spinach and enjoy. I cut the chicken breast in half and make it two dinners. Serve with rice or anything you like. (Not included in calories)
