Chicken Stir Fry with Veggies and Kelp Noodles

1 lb chicken breast thinly sliced1/2 onion chopped1 small zucchini chopped1 small head of broccoli chopped1 c sliced fresh mushrooms3 tsp. garlic finely chopped2 T extra virgin olive oil1 T soy sauce1 Package of Kelp noodles (12 oz)2 Tablespoons water or veg or chicken broth
Sautee garlic in olive oil. Add chicken and vegetables. Sautee until chicken is cooked. Add Kelp (make sure you rinse them off first) noodles, soy sauce and some water or broth. Stir until noodles are to your desired tenderness, i like mine soft so I keep them on a little longer. Add salt and pepper to taste and more soy sauce if desired.
This recipe makes a ton and could easily be a 6 serving dish which would be 161 cal per serving.

I loved this recipe because I am strictly Paleo Eater. I loved the kelp noodles. Those are awesome. The chicken was definitely a little bland, so it should be seasoned with something asian. Instead of soy sauce, I used Gluten free tamari sauce. I highly recommend trying this cuz of the noodles. - 6/8/12
