Best Ever Blueberry Muffins

Ingredients
1.5 cups all purpose flour1 tbsp baking powder1/2 tsp salt1/4 cup sugar4 tbsp unsalted butter, melted and cooled1 large egg, beaten3/4 cup light soy milk, plain1/2 cup blueberries1/2 cup walnuts1/2 cup mashed bananas
Directions
Preheat oven to 400 degrees. Line muffin pan with paper muffin cups.
Sift flour, bakking powder, and salt together in a large bowl. Add sugar and stir lightly. In a seperate bowl, lightly wisk egg, adding melted butter and soy milk.
Pour the wet ingredients into the dry and stir until just blended. Add mashed bananas and fold in lightly. Add blueberries and walnuts, folding lightly. Batter should remain slightly lumpy.
divide evenly between 12 baking cups and bake until golden, 18 22 minutes. remove muffins fromthe pan and tranfer to a wire rack to cool. Best served warm.
