Slow Cooker Lean Beef Stroganoff

Ingredients
48 ounces lean stew meat1 can Simple Request Cream of Mushroom soupGarlic to taste3 oz. red wine2 Tblsn olive oil1 cup chopped fresh celery1 cup chopped onion2 cups sliced fresh mushroom10 Tblsn light sour cream
Directions
1. Brown (slightly) the stew meat with the garlic and the red wine in non-stick pan - just enough to drive off alcohol and for meat to begin browning. Add to slow cooker.
2. Saute celery, onion and mushrooms in olive oil. Add to slow cooker.
3. Add cream of mushroom soup, stir.
4. Cook on low setting (8 hours) or high (4-5) hours.
5. Add sour cream. Thicken with cornstarch/water mixture if desired.
Makes 24 1/2 cup servings.
