Hearty Chicken Vegtable Soup

Ingredients
Rotisserie Chicken4 T olive oil1 large onion diced1 or 2 green peppers diced 4 or 5 celery ribs dicedShake in some seasonings to taste:black peppersalt garlicitalian seasoning parsleymarjoramthymesage1 pkt tako seasoning (if you like it spicy)1 c pearl barley or rice ( barley keeps it shape longer)2 large potatoes diced2 cups frozen butter beans (can use canned)
Directions
Debone a rotisserie chicken or what is left from it and put bones in a large pot and simmer to make broth, about 2 hours. You could add Strain out the bones. I use a spagetti cooker and just lift the inner basket out, saves a lot of time and mess. I used to run it thru cloth but husband said that was silly so I quit.

Once the broth is ready saute onion, celery, and peppers in olive oil then add to stock pot. Add spices. Let simmer. Then add spices, barley, potatoes, frozen butter beans and diced tomatoes.

Simmer a for a few hours or put in the crockpot and leave it all day.
