Baked Salmon with Zuchini & Fire Roasted Tomatoes & Rice

Ingredients
1lb Salmon1 small zuchini1 can Muir Glen Organic Fire Roasted Diced Tomatoes (drained)1 Container of Minute Rice Ready to Serve Brown & Wild Rice2 tbsp Lt Olive Oil
Directions
Place salmon in aluminum lined baking dish (skin side down). Coat with oil.
Peel and slice one small zuchini very thinly over it.
Add can of drained tomatoes and contents of one ready to serve minute rice over all. Mix a little.
Place in 400 deg preheated oven for 30 minutes.
