One-Pot Garden Chicken & Noodles

-2 TBSP butter-3/4 lb. Skinless chicken breast, cut up into3/4" pieces-14 1/2 oz. Chicken Broth (1 Can)-2 cups frozen peas and carrots-1/2 package (6 oz) Ronzoni Healthy Harvest Wide Noodle-Syle Pasta, uncooked-1 (10 3/4 oz) can of Cream of Chicken or Cream of Mushroom soup-3/4 cup skim milk-3/4 cup grated parmesan chees, divided

-In a heavy 5-quart saucepan, over medium heat, melt butter; add chicken and onion. Cook 5 minutes or until chicken is no longer pink.
-Add chicken broth; heat to a boiling.
-Stir in uncooked pasta and vegetables, stirring to coat evenly with liquid.
-Heat to boiling; reduce heat. Cover; simmer on medium heat 8 minutes, STIRRING OCCASIONALLY, or until most of the liquid is absorbed.
-Meanwhile, in a medium bowl, stir together soup, milk, 1/2 cup cheese.
-Simmer until heated through.
-Serve sprinkled with remaining cheese.

We enjoyed this creamy chicken dinner! I doubled it so we would have some leftovers! Could have used some salt but I didnt add any due to having HBP. I did add some pepper while cooking. I figured out the directions but they didnt list the onions called for adding so just used a whole one! - 8/5/12
