Ground Beef and Potato-mash Caserole

Ingredients
1 lb Extra Lean Ground Beef 1 med Onion1 qt mashed potatoes1 can green beans1 can corn or green peas1 cup Broccoli, chopped1 cup carrots, chopped1 tsp Salt1 tsp Black Pepper10 oz of favorite cheeses (recipe calculated using cheddar - 5 oz and Velveta 2% cheese - 5 oz)
Directions
Make mashed potatoes to taste either while preparing this recipe or as left overs from a previous meal (Recipe calculated with my mashed potato recipe). Brown and drain ground beef and onion. Mix together with green beans, corn, broccoli, carrots, and any other desired veggies, salt and black pepper. Spread mixture in the bottom of a large caserole dish. Top with your favorite recipe of mashed potatoes, spread out like frosting. Cook in 350 degree F. oven for 30 minutes, covered with foil. Uncover and top with shredded cheeses. Bake another 15 minutes or until cheese is melted. Makes approximately 10 servings of about 3/4 - 1 cup each. Serve with rolls and maybe a salad or by itself.
