Ingredients
13 Bean Soup Mix1/2 lb. Smoked Sausage2 Med. Chicken quarters1/2 lb. Ham or 2 Ham hocks1 Lg. Onion, chopped3 Cloves Garlic, chopped2 Bay Leaves16 oz. can Tomatoes, chopped or stewed1 Tb. Creole Seasoning2 Qts. Water
Directions
Cooking utensil: Crock pot

1. Rinse & sort beans.

2. Add enough water to cover beans with an extra 2 - 3". Soak overnight.

3. Cut sausage & ham, if using, into bite size chunks. Remove skin & any visible fat from chicken.

4. In the morning, pour out water & add new water to beans.

5. Add all ingredients & stir together.

6. Cover & cook on High for 6 hours. After 4 hours, if/when chicken is cooked through, remove, let cool. Debone, then return to crock pot. Cook for remainder of time.
