1 cup whole wheat flour2 tsp baking powder1/2 tsp giner1/2 tsp cinnamon1/8 tsp nutmeg1/8 tsp mace or clove1/4 tsp baking soda1/2 tsp salt3/4 cup pumpkin, canned and mashed1/2 cup brown sugar, not packed1 large egg1/4 cup non-fat milk1/4 cup melted butter or oil or applesauce1 cup quick oats3/4 cup choco chips3/4 cup raisins
Sift together flour, baking powder, spices, baking soda and salt; set aside. Combine pumpkin, brown sugar, egg, milk, butter(oil or applesauce), oats, choco chips and raisins. Add dry ingredients all at once, mixing just enough to moisten. Spoon into muffin cups, filling 2/3-3/4 full. Fills 14 reg muffin cups. Bake at 400 F for 18-20 minutes.
