Cheesy Spinach Parmesan by Kris

Ingredients
1 10oz pkg. chopped spinach1 24oz container large curd cottage cheese1 C. grated parmesan cheese2 eggs1 Tbsp lemon juiceSalt & Pepper to taste
Directions
Cook spinach and drain well. Add all ingredients except for 1/3 C. parmesan cheese. Mix thoroughly and pour into a greased (cooking spray) 9x9x2 pan or 2 quart casserole dish. Sprinkle with remaining parmesan cheese. Bake at 350 for 45 to 50 minutes or until nicely browned. Let set before serving. Makes about 10 4oz servings.
