Ingredients
1/3 cup flour1/2 tsp salt1/2 tsp black pepper1 lb stewing beef1 med onion, diced1 garlic clove, chopped3 celery stalks, chopped3 carrots, chopped4 med potatoes (peeled & cubed)2 tsp Worcestershire sauce3 cups boiling water1-40g pkg of dry onion soup mix1-2 tsp beef bouillon granules1 tbsp fresh rosemary (optional)1 tsp fresh thyme (optional)1 tbsp Extra Virgin Olive Oil
Directions
Mix flour with salt and pepper in a large ziploc bag, or plastic bowl with lid.
Cut stewing beef into 1" cubes and then toss in flour mixture. Shake to coat.
Add oil to non-stick skillet and then add beef and flour mixture (including any excess flour).
Brown beef then add onion and garlic. Cook until onion is soft.
Place beef, garlic and onion mixture in bottom of slow cooker with the rosemary and thyme and let cook on low until meat is tender.
Then add potatoes carrots, celery, water, soup mix, bouillon and Worcestershire sauce.
Cook on high for 2-1/2 hours, and then turn down to low for 2 more hours. If you have a little more time to spare cook on low for 6-8 hours, or until potatoes and carrots are tender.
No extra thickening of the beef stew gravy should be required. It turns out perfectly for me every time.
Makes about eight 1-1/2 cup servings

Very tasty. Bullion is left out of the ingredients list, but in the cooking directions. I used a 14oz. can of beef broth and 10oz of water, combined and boiled to replace the 3 cups boiling water. Turned out fabulous!!! - 1/5/09

Beef is so tender! Love this recipe. Didn't have onion soup mix, so I just used all broth and a bigger onion to keep up the flavor. I also added extra veggies (corn, peas, & green beans) that I had in the freezer. - 12/31/13

It was delicious! The whole family enjoyed it. I made some changes like the ratings before (cooked onions with wine, used beef boullion, and used a bay leaf). There was a lot of extra "gravy" which I froze and will add slow cooked chuck roast to it for a meal next week. - 3/10/10

Very good, hearty stew. I used a bay leave instead of thyme and rosemary and was a lot like my mom used to make! - 1/6/09

I replaced the beef with chicken and used chicken broth (14 oz low sodium can) with 2 cups water. I also used unpeeled red potatoes. Really good. - 1/14/16

Husband and I absolutely loved this recipe! I made it last week and we are making it again today...awesome! We added a little wine when softening the onion and garlic mixture - it was great! - 2/7/10

the garlic shouldn't be cooked as long as the onion is. Add it a minute before onion is done. You only cook it for a minute or until fragrant. It'll taste much better. - 1/14/19

I am added a can of tomato paste to my stew it was outstanding! My nephew told me to do that he raises cattle and he gave me one of his pot roast it was delicious! He was funny he was hesitant to give me his pot roast recipe because I’m old and should know how to cook it :-) - 1/14/18

I don't know how this is 252 calories but I am not complaining! This is the best. I'm new to slow cooking and this was super easy. I just throw it all in with the meat on the bottom and let it cook all night and turns out perfect every time! - 10/8/16

I make mine similar, but don't use onion soup mix, or some of the other ingredients. I also cook mine on top of the stove, on low. I also add can beef broth, and small can of tomato juice, instead.
