Marinated Cauliflower Salad from Vegetarian Times

Ingredients
3 Tbs lemon juice1 Tbs Dijon Mustard1 clover garlic minced1 tsp olive oil2 Cups bite sized cauliflower florets1 small Red Bell Pepper cut into 3/4 inch diced2 Tbs chopped fresh parsley1/4 Cup shaved Parmesan cheese, optional
Directions
Wisk together lemon juice, mustard, garlic and oil in a small bowl. Toss with Cauliflower in a large nonreactive bowl, cover and refrigerate 4-8 hours. Stir 1-2 times.

Stir bell pepper and parsley into marinated cauliflower. Season with salt and pepper and sprinkle with Parmesan Cheese.
