rye-graham bread

Ingredients
300g graham flour200g rye flour350g weat flour (type 1100)30g yeast5 tbsp olice oil1 tbsp salt500 ml warm water1 tsp sugar1 tbs flax seed2 tbsp ground flax seed30g rolled oats
Directions
Put yeast in bowl. Add some water, sugar and some flour. Let rise.
Add all flour, all water, salt, olive oil and water and mix well with a mixer.
Knead little, form a ball and cover with kitchen cloth. let rise till double.
Knead again, form dough into two loafs and place in greased baking form.
Let rise again.
Bake for about 20 minutes or untill done.

    I reduced the recipe by half just in case I didn't like it. Some flours are an acquired taste. I liked that the recipes measurements were in weight/volume. Much more accurate.
    The flavor of the bread was a bit bitter. It's a heavier texture than I like. Just a matter of taste. - 3/6/11
