Green Tomato Casserole

Ingredients
4 green tomatoes, thickly sliced 1 tsp salt 1/2 tsp pepper 1 Tbs light margarine 1 cup grated fat free cheddar cheese 10 reduced fat crackers, crushed 1 Tbs light margarine, melted
Directions
Preheat oven to 350°. Lightly spray and 8-inch square baking dish with vegetable cooking spray. Layer green tomatoes with salt, pepper, butter and cheddar cheese in greased baking dish. Bake at 350° for 30 minutes, or until the tomatoes are tender. Sprinkle cracker crumbs on top and drizzle with butter. Bake 5 minutes longer.
