Mexican Torta

Ingredients
1/2 pound ground turkey1 cup onions, chopped2 cloves garlic, mince1 package Taco Seasoning Mix, low sodium4 oz can chopped green chilies, drained16 Corn Tortillas, cut in fourths2 cups lowfat ColbyJack Cheese shredded2 cups Fat Free Refried Beans1-7 oz. jar Roasted Red Peppers, dicedSalsa, 1 cup
Directions
Cook turkey, onions and garlic in non-stick skillet until turkey is brown and onions are translucent.

Stir in taco seasoning and green chilies. Set aside.

In 2 quart casserole dish, layer one fourth of tortillas. Spread half turkey mixture over this. Sprinkle one cup cheese over this.

Add another layer of one fourth of the tortillas. Spread refried beans over this.

Add another layer of one fourth of the tortillas. Spread the roasted peppers over this.

Add final layer of one fourth of the tortillas. Spread remaining turkey mixture over this. Sprinkle remaining one cup of cheese over top.

Bake at 350 degrees for 30 minutes or until bubbly and heated through. Serve with salsa if desired.
