Sandwich - Quick Chicken Panini

1 Joseph's Flax Oat Bran and Whole Wheat pita (or other pita of choice)1 wedge laughing cow light creamy onion or garlic cheese4 tbsp cilantro, chopped3 oz chicken breast, cooked, chopped
Heat panini grill (or George Foreman like grill)
Mix laughing cow with cilantro and spread on pita
Add chopped chicken and fold pita closed
Place pita on grill for 5 minutes until thoroughly heated
If you don't have a panini or george forman.. use a regular skillet with a press on top (like a foil wrapped brick) and cook on each side for 2-3 minutes.
