Yummy Low-Cal Banana Nut Muffins

8 T. or 1 stick margarine3/4 c. sugar2 eggs1 c. flour (all purpose)1 t. baking soda1/2 t. salt1 c. whole wheat flour1 1/2 c. bananas, mashed1 t. vanilla1/2 c. walnuts, shelled, coarsely chopped
1. Preheat oven 350*, spray muffin pan with non-stick spray.
2.Cream butter and sugar till light and fluffy. Add eggs one at a time, beating well after each addition.
3.Sift all flour, baking soda, and salt together, stir in whole wheat flour and add to creamed mixture, mixing well.
4. Fold in bananas, vanilla, and walnuts.
5. Pour approx. 1/3 cup into muffin pan. Bake for 14-18 minutes or until golden brown. Cool in pan for 5 minutes.
Makes 18 regular sized muffins
