Bean Soup

Ingredients
6 cups (one 48 oz. jar) Randall's Deluxe Mixed Beans1/2 package Eckrich SkinlessTurkey Smoked Sausage2 cups canned no salt tomatoes (I used my home frozen)1/2 cup grated carrots1/ c. chopped onon1/2 cup diced celery1/4 tsp. garlic powder (not salt)1/4 tdp ground thyme1 Tbsp extra light olive oil2 cups Swanson Lower Sodium Fat Free Beef Broth
Directions
Saute the onion and celery in the olive oil in soup pot until tender. Cut meat into bite-size pieces and add. Add all the other ingredients with the exception of half the beans. Bring to nearly a boil, cover, reduce heat and simmer about 20 minutes. Add the rest of the beans and simmer another 20 minutes until all is hot and thickened. (I cooked the beans half at a time to keep the thick soup from sticking, but if you put it all in a crockpot, you could put them all in at once.)

Makes 10 1-cup servings.
