Brocoli and Blue Cheese Soup

Ingredients
2 tablespoons olive oil1 Leek, washed and sliced2 cloves garlic, finely chopped or crushed2 L vegetable stock2 bunches Brocolini or Brocoli, chopped roughly100 grams blue cheesethyme for garnish
Directions
Heat olive oil in a deep saucepan to a medium heat, saute leek and garlic until tender (approx 10 minutes).

Add brocolini and vegetable stock and simmer for about 15 minutes, or until tender.

Blend mixture in a food processor or blender until smooth, adding small amounts of the cheese to ensure it melts smoothly and is consistent through the soup. Wash original saucepan out and return to stovetop. Return blended soup to the saucepan to warm.

Add thyme before serving.
