Cheese and Garlic Scones

Ingredients
1 cup brown rice flour1 cup whole wheat flour1 cup unbleached flour1 tbsp baking powder2 tsp salt5 tbsp unsalted butter1 cup grated colby cheese1/2 large red pepper, finely chopped1 garlic clove, minced2 tbsp chopped fresh parsley2 eggs3/4 cup light soymilk
Directions
Preheat oven to 450 degrees.
Cut butter in pieces and put in food processor with brown rice flour. Process until it looks like cornmeal. Add whole wheat flour, baking powder and salt. Process just to mix. Add cheese and process again to mix. Add unbleached flour and pulse to mix in. Add red pepper, garlic and parsley. Pulse to mix. Add eggs and soymilk and pulse until mixture forms a ball. Divide the dough into 3 pieces and form each into a 5 inch disk. Cut each into 4 wedges. Place wide apart on cookie sheet that has been very lightly greased. Bake 10 to 15 minutes, until firm but not dry.
Makes 12 large scones
