5 cups beans (pintos)29 ounces (1 large can) tomato sauce24 ounces (3 cups) waterMeatballs:2 cups panko crumbs2 pounds lean ground beef2 Tablespoons minced garlic1 cup FINELY minced onion1/3 cup FINELY minced bell pepper1 Tablespoon Cumin powder1 teaspoon tumeric powder1 teaspoon chili powder2 large eggs1 cup cooked rice
Mix beans, tomato sauce and water. Set to simmer.
In large mixing bowl, mix rest of ingredients very well. Let sit 10 minutes.
Roll into tablespoon sized meatballs. (should make about 100 to 130 meatballs). Drop into simmering base.
Simmer until the soup thickens and the meatballs are cooked through - about 2 hours. Stir frequently.
Makes 20 1-cup servings
