Crock Pot Turkey-Stuffed Peppers

4 Green Bell Peppers1.25 lbs. Ground Turkey1 cup Onion, Chopped1 - 14 oz. Can Diced Tomatoes2 Egg Whites1.25 cups Cooked White Rice1 cup Tomato Sauce
While rice is cooking, slice the tops off of the four bell peppers and remove the seeds. Discard the stems, and put the peppers to the side. Chop the edible part of the tops of the peppers.
In a large mixing bowl, put the chopped pepper, onion, 1/2 of the can of diced tomatoes, egg whites, and turkey meat. Mix the ingredients until consistent. Mix in the cooked rice.
Into the bottom of the crock pot, spread the tomato sauce. Then, stuff each pepper shell with turkey mixture and place into the crock pot. Put the remaining diced tomatoes on top of the peppers.
Cook on low for 4 hours.
Makes 4 servings (1 stuffed pepper per serving).
