chicken fajitas & spanish style rice for 1

Ingredients
1 3oz. boneless skinless chicken thigh1/4 onion 1/4 bell pepper2 12" wheat tortillas1/2 cup instant brown rice2 tbsp white corn and black bean salsa(opt) 1 oz. jalapeno slices1/2 cup shredded lettuce1 plum tomato diced
Directions
boil water for rice
cook rice according to pkg.
in last 5 minutes, add salsa, (your choice), cover

while rice is cooking
slice chicken, onion and pepper into thin strips
add salt & pepper to taste

preheat non-stick pan slightly

cook chicken, onions and peppers approx. 10 minutes until all done and slightly charred
turn off heat and place tortillas on top to heat (30 seconds)

place both tortillas on a board
top each with half of chicken and veggie mixture, lettuce tomatoes and jalapenos
fold sides over, place on plate fold side down

fluff rice and serve along side

tip: breast has fewer calories, but for my taste, thigh was more favorable. therefore, I found it more suitable for this recipe
