Healthy Egg Salad Sandwhich

6 large eggs1-2 table spoons of greek yogurtsalt and pepper2 stalks of celery (chopped)1/2 bunch of chives (chopped)8 slices of whole grain bread (toasting is optional)
place eggs in a pot and cover with cold water by 1/2 inch or so. Bring to a gentle boil. Now turn the heat off, cover and let sit for exactly 7 minutes. Have a big bowl with ice water ready and when the egss are done cooking place themn in the ice wat3er for three minutes, long enough to stop the cooking. Crack and peal the eggs. place in a medium mixing bowl , add the greek yogurt, a couple of pinches of salt and pepper, now mash with a fork. Don't over do it, you want it to have some texture. add a little more yogurt if you want to moisten the mixture more, now stir in the chopped celery and chives to taste. assemble your sandwhich, and enjoy.
