chicken and brocolli bake

Ingredients
1 whole chicken breast, boneless and skinless1 pkg of frozen broccoli2 TBS of reduced fat sour cream1/2 tbs Extra virgin olive oil1/2 C raw onion, chopped1 clove of garlic or more to taste (chopped)6 oz of cooked pasta, I use bowtie1 can of 98% fat free cream of mushroom soup1 cup shredded lowfat cheese, cheddar jack works well.salt and pepper to taste
Directions
Spray frying pan with pam, add olive oil, onion and garlic. Cook until translucent, not brown. Chop chicken and add to this. Cook until chicken is done but not brown. In another pan put uncooked pasta and broccoli and cook until tender, drain and set aside. Add chicken mixture to broccoli mixture, season to taste. Mix sour cream and soup and mix into chicken mixture. Pour into square 9 inch pan. Top with shredded cheese and bake at 350 for 30 minutes.

    I made this tonight. Not to bad. I used whole wheat Healthy Harvest pasta. Too bland, will have to add more spices next time. - 10/2/10
