1 tablespoon olive oil1 small white onion, diced1 medium green pepper, chopped6-8 cloves (about 4-6 teaspoons) fresh garlic, minced1 (15 ounce) can garbanzo beans (chickpeas), drained2 (15 ounce) cans chili beans, medium sauce, with liquid 1 (15 ounce) can black beans, drained3 cups (1 lb bag) frozen corn, thawed1 (15 ounce) can diced tomatoes, with liquid 1 (24 ounce) can tomato sauce½ cup brown sugar½ cup spicy barbecue sauce 1 teaspoon chili powder1 teaspoon salt1 teaspoon pepper
1. Using olive oil, sauté onion, green pepper, and garlic over medium heat until onions are soft and translucent.
2. Add ¼ cup of brown sugar (reserving the rest) and cook until brown sugar has glazed the vegetables. Transfer to large crock pot.
3. Add remaining ingredients to the crock pot and stir well.
4. Cook in crock pot on high setting for three hours (or low setting for 8 hours).
5. Makes about 10 servings, 1 1/4 cups each
